Recall playbook
Pull the protein, rest a fresh one immediately, and tell expo before you re-fire. A re-fire never queues behind new tickets — it jumps the rail and takes the next open slot on the plancha.
New board, new tongs, clean towel. The allergy flag rides on the ticket card in red until the plate is bumped — nobody calls it clear except the lead on that station.
Any recall over ten minutes of lost time is an automatic comp on the item — expo marks it, the server never has to ask. Two recalls on one table and the floor manager walks the dessert out personally.
