One tray, a jar of mango, and a whole lot of napkins. This is the recipe that convinced three separate people I could cook.

Whisk the chutney, soy, garlic, lime, and chilli in a bowl. Rub it all over the ribs, cover, and let them sit.
Heat the oven to 160°C. Lay the ribs on a lined tray, cover tightly with foil, and roast until tender.
Uncover, brush with the pan juices, and crank the oven to 220°C. Roast until the edges char and everything turns glossy and sticky.
Let the ribs rest five minutes, then pile them up with extra lime wedges and a very confident attitude.
No mango chutney? Apricot jam plus a squeeze of lime gets you 90% of the way there. Don't tell anyone.
